is kombucha? The short answer: An effervescent, fermented tea loaded with probiotics. The
long answer: Kombucha fermentation is a 2,000
year old practice that, historically, is
almost universal. It's origin is
uncertain, but it has a rich tradition in
China, Japan, Korea, Russia, Poland, and many
other countries, assuming different names in
each country. The fermenting agent,
called a mother or SCOBY (symbiotic culture of
bacteria and yeast) rests on top of a liquid
made from black tea and cane sugar. The
primary bacteria in the SCOBY are
lacto-bacillus and through bacterial
consumption of the lacto-fermentation
occurs. The SCOBY grows to the size of
the container, thus trapping CO2, which adds
the fizz or carbonation. After
fermenting for a period of time, usually
around 12 days, the fermented brew is either
bottled or kegged. Flavoring usually
occurs at the time of bottling.
Why kombucha? The
health benefits of kombucha are largely
responsible for its consumption, however it
taste pretty dang good too. An alive
drink, with various yeasts and bacteria, it is
rich in probiotics, which aid in digestion,
and organic and amino acids, which help the
liver detoxify the body. Kombucha's
health claims are legendary, with some people
refering to it as an "elixir," consumed as a
total body tonic. As a probiotic and
liver toxic flush it promotes well being and
strengthens the immune system without the side
effects and expense of prescription
drugs. Compared to vitamins it's so much
more interesting and tasty!
Where can it be found? Lots
of places! But especially at the Ninth Street
Bakery cafe. Ninth Street Bakery is
brewing kombucha is the heart of downtown
Durham. We're calling it Bull City
Booch! And it's available on
draft. We are using all organic
ingredients along with carbon filtered water
for each small batch. The varieties will
change with the season (or saison). We
will be offering four different blends for
winter, spring, summer, and fall. The
Saison Winter Kombucha is made with apple
cider, chai tea, vanilla, and a little
cayenne. Our Saison Spring is in
development and will be ready when the
crocuses come up! We have it on tap and
you can get it to go in one of our flip top
